One of the items in my box was Jif Cinnamon Peanut Butter. Three ideas immediately came to mind when I picked up the jar. The first one was that my kids would love it as an apple dip! I often give them sliced apples in their lunch box with some peanut butter for dipping. (I bought small 2 oz. plastic condiment cups with lids and use them in my kid’s lunches regularly. We use them for salsa, salad dressing, hummus, peanut butter, etc!) The second idea was cinnamon peanut butter cookies and the third idea was Cinnamon Peanut Butter Krispie Treats! It was a hot day, too hot for the oven, so I opted for the krispie treats! I wanted to make a healthier version of the traditional rice cereal treats, so I used organic brown rice cereal and organic honey, instead of butter and marshmallows. It works really well together!
Cinnamon Peanut Butter Krispie Treats
- Jif Cinnamon & Peanut Butter Spread, 12 oz jar
- 3/4 Cup Honey
- 4 Cups Brown Rice Cereal
- (1/2 Cup Chocolate Chips, optional)
In a medium pot, add 12 oz. Jif Peanut Butter & Cinnamon Spread and 3/4 cup honey.
Stir over medium heat for a few minutes, until well combined. The consistency will be a little thin. Do not overcook!
Remove from heat and then stir in the 4 cups of brown rice cereal. Mix well. Grease a glass baking pan, 8×8, 9×9 or 8×11. (You can use a 9×13, but they will be much thinner. We prefer thicker bars) If desired, top with chocolate chips.
Press mixture evenly into pan and refrigerate for 30 minutes. Cut into squares and enjoy! Store remaining portion in air tight container.
