I was craving a pumpkin scone from Starbucks and as you may know, they’re near impossible to find now that they’ve partnered with La Boulange, many of our old favorites are gone. I was searching for recipes and I found one here. I’ve changed it slightly and was quite pleased with the outcome!
Copycat Starbucks Pumpkin Scones
- 2 Cups Flour
- 1/3 Cup Brown Sugar, packed
- 1 TBSP Trader Joe’s Pumpkin Pie Spice
- 1/2 TSP Baking Soda (I accidentally used Baking Powder and it still worked ok)
- 1/4 TSP Salt
- 1 Stick Butter, Very Cold, Cut Into Pieces
- 1/2 Cup Pumpkin Puree
- 3 TBSP Milk
- 2 TSP Pure Vanilla Extract
- 1 Egg
Combine the flour, brown sugar, pumpkin pie spice, baking soda and salt and mix well. Now add the cold pieces of butter and begin to mix by hand until the consistency is coarse and crumbly. Make sure the butter is pretty well distributed in the mixture.
In a separate bowl, combine the pumpkin puree, milk, egg and vanilla with a whisk or fork until smooth. Pour over the dry ingredients and mix until a dough forms.
Lightly flour a surface and carefully work the dough so it can be rolled out. Using a rolling pin, roll out the dough into a rectangle, and the thickness should be close to 1 inch. As you can see, mine weren’t quite that thick. Now use a knife dipped in water (to avoid sticking) and cut the rectangle down the middle. Then divide each half into thirds. After this, you will cut each rectangle into triangles. It should look something like this.
Line your pan with parchment paper and carefully place the pumpkin scones on the pan. Bake for 10-12 minutes in a preheated oven at 400 degrees. Check for doneness with a toothpick. If it comes out clean, they’re done. Allow to cool a bit on a wire rack.
Now its time to make the glaze. The original recipe calls for 2 glazes, but I wanted to reduce the amount of sugar. I realized at this point that I did not have enough confectioners sugar so I decided to make my own! Its very {simple} and you may consider making your own confectioners sugar for this recipe. I find that you can control the texture and I didn’t make mine quite as fine and powdery. My glaze was slightly thicker, which I prefer on scones.
Spiced Glaze
- 1 Cup Confectioners Sugar
- 1 TSP Pumpkin Pie Spice
- 2-3 TBSP Milk (Adjust to desired consistency)
Mix ingredients together and place glaze in a sandwich size ziplock bag. Seal bag with as little air as possible inside. Cut a tiny tip off one corner and now pipe the glaze on your pumpkin scones. Allow to set for a few minutes and enjoy your scones!
