Homemade guacamole is the BEST and an easy guacamole recipe is even BETTER! We love it with chips & salsa, on tacos, in salads, nachos with sliced raw veggies or by the spoonful. Its great any time of the year, but I especially love guacamole in the summer. Its perfect for those summer BBQs. Just this weekend, we grilled chicken and halibut for tacos. I whipped up some guacamole and pico de gallo and we couldn’t get enough!
Pico de Gallo is also a great summer salsa and very easy to make. Chop about 8 medium Roma tomatoes, 1 Serrano chili, 2 green onions(or 1/3 cup of chopped white onion), a drizzle of olive oil and a big squeeze of lemon juice. Salt and pepper optional. It is such a fresh burst of flavor! You can easily add some chopped mango or pineapple to make a delicious tropical salsa. Great over grilled chicken or fish!
Easy Guacamole
- 4-5 Ripe Avocados
- Juice of 2 Small Limes (May need more depending on size of limes & avocados)
- 1-2 Serrano Chile Peppers, seeded & finely chopped OR Diced Jalapeños, to taste
- 1/2 Cup Chopped Cilantro
- 2-3 Chopped Green Onions (or can sub red or white onion)
- 1 Chopped Clove or 1/2 tsp minced Garlic
- Drizzle of Extra Virgin Olive Oil
- Coarse Salt & Fresh Cracked Pepper, to taste
Begin by chopping the onion, cilantro and hot peppers, then set aside. Remove flesh from avocados and gently mash with fork until somewhat chunky. Add lime juice (this adds flavor AND prevents the guac from turning brown. Be sure to use enough to mix in thoroughly)
TIP: In addition to lemon or lime juice, another way to prevent guacamole from turning brown is by placing the large pits from the avocados in the bowl. It really works!
Gently fold in the remaining ingredients. Cover tightly and chill at least 1 hour before serving.
