Confession time. We’ve been eating terribly for months and have so little energy. For me, this means more coffee and tons of coffee creamer, with even more sugar. We used to be really good, then came Halloween. Then Thanksgiving. Then Christmas. It was like a 3 month sugar high! I’d like to say we’ve kept up with our exercising, but when you’re always tired, who wants to exercise??? I decided we had enough and I’ve been making an effort to find healthier snack options for the family. We like muffins a lot, but did you know the average blueberry muffin has about 400 calories?? But VitaTops MuffinTops don’t!
While I was shopping at Target I found VitaTops in the freezer section. They were located with breads and breakfast items. All of the deliciously indulgent VitaTops Muffin Tops use only clean and simple ingredients and offer a wide range of nutritional benefits. Our local Target had Blueberry and Deep Chocolate, which happen to be my kid’s favorite muffin flavors! SCORE! Other varieties offered are Superfood CranBran, Protein Chocolate Peanut Butter and Protein Banana Chocolate Chip.
What appealed to me most was that they are just MuffinTops! My kids don’t always finish muffins so having just the “top” is perfect.
I initially bought the VitaTops MuffinTops to pack in my kid’s lunch boxes for mid-morning snack, but then I tried one! They were a perfect grab and go snack for me! I have a very busy schedule so I need good, low calorie snack options too! I can’t wait to try the Banana Chocolate Chip!
But my favorite way to eat a VitaTop MuffinTop is with a hot cup of coffee. Remember I was saying that I was drinking lots of coffee with lots of coffee creamer? One of the other decisions I made was to make my own coffee creamer, with healthy ingredients too! I love chocolate, almonds and coconut, so naturally I decided to make an Almond Joy Coffee Creamer!
Ingredients:
- 1 Can Organic Light Coconut Milk
- 1 TSP Pure Almond Extract
- 1 TBSP Unsweetened Cocoa Powder (plus 1-2 TSP hot water to dissolve)
- Raw Honey, to taste (I used 4 TBSP)
Empty the can of Light Coconut Milk in a medium bowl, then add the Pure Almond Extract. In a separate, small bowl, dissolve the cocoa powder with a couple of teaspoons of hot water. Stir well, then add it into the coffee creamer mixture.
If you choose to sweeten your coffee creamer, then add the raw honey, to taste. You can use pure maple syrup, but I chose not to. Maple has a distinct flavor and I knew it would alter the flavor. I love it in many other things, but not for Almond Joy coffee creamer.
Once blended, pour into a bottle and refrigerate (sealed). This Almond Joy Coffee Creamer should keep for 7-10 days, max.

So delicious. I will also try using regular coconut milk next time. This was a nice consistency, but I do like a really thick and rich creamer.
