I made the most tender and delicious stew the other night. It couldn’t have been easier to make.
I began with 2.5 lbs of stew meat from Costco. I seasoned the meat with salt and pepper, then set aside. In my crock pot, I whisked together 1 can of tomato paste with 1 bottle of beer. Once the paste was blended, I added about 1 tsp of smoky paprika and 1 tsp of minced garlic. Here is where I would have added a sliced onion, but ended up using onion powder instead. (I went a little overboard making pickled onions and used up everything I had)
Now I added the meat to the crock and coated it thoroughly. I drained 1 can of diced tomatoes and poured it over the meat, then topped it with 1 tsp of Italian Seasoning.
Cover and cook on low for 8 hours. When it was done cooking, I quickly sautéed 1lb of sliced mushrooms in a little olive oil and added it to the meat. We ate it over rice.
The meat cut with a fork and melted in your mouth!
The liquid was a thin consistency. I think the next time I make this I will add a little cornstarch to thicken and make it more into a gravy.
We made sandwiches out of the leftovers on crusty rolls and topped them with a little mozzarella. So good!
