Here is a Spanish Rice recipe that is fast and easy to make. The first time I made this recipe was alongside some grilled tri-tip and salad. Spanish rice sounded good and though I didn’t have a recipe for it, I’ve seen it cooked this way before and I just added whatever I had on hand. This Spanish rice was a BIG hit with the family! Everyone had seconds! Tonight I used it as a top layer for a Mexican casserole that my youngest calls “Mexican Lasagna”. She created this recipe several months ago and it has been a family favorite ever since. It is layers of taco meat, cheese, corn, tomatoes and Spanish rice.
With Cinco de Mayo approaching, this will be a fabulous side dish with any Mexican recipe you make. Spanish rice would be fabulous along side some tacos, enchiladas, tostadas, burritos, carnitas, etc. Even if you are just grilling some chicken and fajita-style veggies, this would go with it so well! The possibilities are endless!
Spanish Rice:
- 2 Cups White Rice (I use Jasmine)
- 4-6 TBSP Oil
- 1/2 Medium Onion, finely chopped
- 1 tsp Cumin
- 1 Clove Fresh Chopped Garlic
- 1 Can Tomato Paste mixed with 1 can water
- 4 cups chicken stock (I use the Kirkland Organic Chicken Stock)
Begin by heating oil in a large skillet. Add rice and lightly brown while stirring continuously.
Next, add the chopped onion and cook for a few minutes until slightly translucent.
Mix in the cumin and garlic, stir well.
Then add about 3/4 cup tomato paste mixture and chicken stock.
Mix well, cover and simmer on low for about 20-25 minutes, stirring occasionally. When done, fluff with fork and add salt to taste, if desired.
*My rice cooked pretty quickly. By 15 min, it began to adhere to the pan, so I added the remaining tomato paste mixture, mixed well and continued cooking for about another 5 min.
Like I said, this Spanish Rice makes a great side dish for so many meals. One of our favorites areMargarita Chicken Fajitas! They go so well together!
