I keep stumbling upon the Pioneer Woman’s Perfect Iced Coffee and it looks so good and so {simple}. I love iced coffee in the summer. I finally decided to try my own version, since her recipe makes 2 gallons. I don’t have enough space to store 2 gallons of iced coffee and though I really LOVE it, I’m sort of caffeine intolerant. Too tempting and I’d be bouncing off the walls.
I began by getting a gallon bottle of water. I didn’t want to use a pitcher for the cold brew and you’ll see why in a minute. Remove (temporarily) about 3 cups of water. Then I carefully added half a bag of ground coffee.
Next I put the cap on the bottle and shook it well so the grounds would settle to the bottom instead of floating on top. Afterwards, I added back most of the water I removed from the bottle. Seal and store in the fridge for 12-24 hours. Occasionally give a shake to mix.
Of course I realized after I started straining it that I forgot to photograph the bottle, so thats why it isn’t full to the top. The Pioneer Woman suggest using a cheesecloth lined strainer, but I didn’t have any. I used a small tea strainer that has very tiny openings, so it worked pretty well, but I see where the cheesecloth would be so much better. Most of the grounds do settle to the bottom and stay there while straining.
This is why I didn’t want to use a pitcher for brewing. The clean up was easier and it was one less thing to wash. I am pretty satisfied with the result. I used to brew a pot of coffee and chill for iced coffee, but it was always bitter. For some reason, this was not. Pretty smooth and delicious! I’m sold!
