Coffee Cake In A Mug

Here is a recipe for a single serving coffee cake made in the microwave.  Sweet, warm coffee cake to satisfy your sweet tooth in just minutes!  My children LOVE this recipe and will request it for a special treat.

Coffee Cake In A Mug

Cake Batter

  • 3 TBSP Flour
  • 1/4 tsp Baking Powder
  • 1 Packet Sweetener (I used Stevia in the Raw)
  • 5 tsp Water
  • 2 tsp *Oil (you can also sub applesauce) 
  • 1/4 tsp Vanilla
  • Sprinkle of Cinnamon
* I do not recommend using olive oil or it will affect the taste of this recipe. You can use something mild, like vegetable, canola or sunflower. Though you may taste it, coconut would be ok too.

Streusel Topping
  • 1 TBSP Brown Sugar
  • 1/4 tsp Cinnamon
  • 1/2 tsp *Oil 
Mix dry ingredients in your mug.    
Once blended, add water, oil and vanilla.
In a small bowl, mix streusel topping until crumbly.
(We tend to like more streusel, so when I make 2 mugs, I will often mix a third batch of topping and divide between the mugs. not shown)
Add on topping over your batter and microwave on high for 1 minute.  
This will be HOT!  Allow to cool for a few minutes, then eat warm.  
The kiddos have requested this for dessert a couple of times and topped it with a small scoop of vanilla ice cream.   
The serving size is similar to a small cupcake.
