These cookies are {simple} and AMAZING! They are soft and chewy like a slice of banana bread and the caramel icing is to die for! I’ve made both, cookies and banana bread from a cake mix before and thought it might be fun to mix things up a bit. The taste reminds me of Bananas Foster, without the vanilla ice cream. However, I think one of these cookies would be perfect to top off a scoop of vanilla bean or even rum raisin ice cream!
Bananas Foster Cookies
- 1 Box Yellow Cake Mix
- 3 Medium Very Ripe Bananas, Mashed
- 1 Stick Butter (1/2 Cup), Softened
- 1 Tsp Pure Vanilla Extract
- 1-2 Tsp Rum or Rum Extract (optional)
- 1 Tsp Cinnamon
Preheat oven to 350 degrees.
In a large bowl, combine bananas and butter with an electric hand mixer. Add extract(s) and cinnamon & mix well. Now add your cake mix. I used my electric mixer, but you can also mix by hand. The dough will be thick. You can chill it before baking, but I did not.
Line a baking sheet with parchment paper. Drop 1 inch spoonfuls about 2 inches apart. Bake for 10-12 minutes. When done, cool on a wire rack until ready to frost.
* I use a 1 TBSP rounded measuring spoon because I do not have a cookie scoop. I just coat it with veg oil or cooking spray so the batter does not stick. This way, my cookies stay the same size and the batch bakes more evenly.
Firm Caramel Icing
- 3 TBSP Butter
- 1 Cup Brown Sugar, Firmly Packed
- 4 TBSP Milk
- 3/4-1 Cup Powdered Sugar
- 1 Tsp Vanilla
In a small saucepan, add butter, brown sugar and milk. Stir over medium heat and bring to a boil for 2 minutes, no more. Remove from heat and continue to stir as the mixture cools. Once it has cooled down quite a bit, add the powdered sugar and vanilla and combine well. Use immediately because this icing firms up quickly. If it begins to harden before your done, add a tiny splash of milk and mix until the consistency thins out a bit. Drizzle over the cookies and allow to harden. Store in a sealed container.
I love this icing. I found it a couple of years ago when I needed a firm icing for a bundt cake.
