Our dessert last night was a big winner with the whole family! I made So Delicious Dairy Free Cupcakes. They are no-bake and SO easy to make! You can make them ahead and stored in your freezer until ready to serve. I’ve already been asked when I’ll be making them again!
One of my kiddos sometimes gets an upset stomach when she eats frozen dairy treats. Though we have no diagnosis of lactose intolerance, we try to limit her dairy intake. I am always on the lookout for little ways to add healthier food options for my family. Of course this varies from family to family, but for us it means cholesterol free, dairy free, Non-GMO, no artificial colors, flavors or preservatives and no high-fructose corn syrup in the foods I serve my family. So Delicious Dairy Free Cupcakes
I found a great selection of flavor options at Walmart. Some of the favorites are Cashew Salted Caramel Cluster, Cashew Dark Chocolate Truffle, Coconut Vanilla Bean, Coconut Milk Chocolate, Almond Milk Mocha Almond Fudge and many more. I chose Mocha Almond Fudge and Coconut Milk Chocolate. While shopping at Wal-mart, I also happened to find a Gluten-Free Cookie Dough variety that I purchased for my daughter. They can easily be found in their freezer aisle with other frozen dessert items.
So Delicious Dairy Free® Cupcakes
- 6-8 TBSP Butter, Melted
- 8 Cream Filled Sandwich Cookies (Regular or Gluten Free)
- 10 Chocolate Mint Cookies
- 1/8 Cup Chocolate Chips
- 2-3 Pints So Delicious Dairy Free® Frozen Treats* Mocha Almond Fudge & Milk Chocolate
- 1 Tub Non-Dairy Whipped Topping
- Dessert Toppings: Chocolate Syrup, Toasted Almond Slices, Chocolate Shell Topping, Caramel
* You can choose any of your favorite flavors of So Delicious Dairy Free® frozen desserts.
Melt the butter and set aside. In two separate zipper baggies, place cookies inside and crumble with a rolling pin, until it is in small-medium chunks. Remove your containers of So Delicious Dairy Free® frozen treat from the freezer to slightly soften, for easy scooping.
Empty each baggie of cookie crumbles into separate bowls. I mixed 1/8 cup chocolate morsels in with the crumbled chocolate mint cookies. Next divide the melted butter between both bowls. Mix thoroughly with a fork. Once the butter is mixed all the way through, press about a tablespoon of “crust” into each cupcake liner. I prefer to use silicone liners for this because it is very easy to remove the cupcakes when done.
Next you will add a scoop of the frozen treat to each cupcake liner. Return the cupcakes to the freezer, for at least 30 minutes.
In the mean time, I added non-dairy whipped topping into a sandwich baggie and cut off the tip. I was able to easily pipe the the whipped topping on top of each cupcake and returned them to the freezer for a minimum of 20-30 minutes. This will allow the cupcakes to hold their shape.
For the Mocha Almond Fudge Cupcakes, I used the sandwich cookie base and drizzled a little caramel in the center. Then I added a scoop of the Mocha Almond Fudge frozen treat, whipped topping and some toasted almond slices for garnish.
For the Chocolate Mint Cupcakes, I used the chocolate mint cookie base. Next I added a scoop of the chocolate frozen treat, whipped topping and chocolate syrup.
They were ALL So Delicious!
