{Simple} Crock Pot Chicken Tikka Masala and Kale Chips

I have made some really tasty dishes that no matter how hard I try, they just won’t photograph well.  Here are a couple that didn’t make the visual cut, but I assure you tasted so good!

Kale Chips
I hear so much about Kale Chips and I one day I sampled some in a market, but couldn’t bring myself to spend $5.99 on such a small bag.  I found this recipe on the Food Network and decided to give it a try.  
Basically you  clean your bunch of kale, then remove the thick spine.  Drizzle with a little olive oil and sea salt.  Bake at 350 deg for about 10-15 minutes.  They’re suppose to look green, but crispy.  Mine tasted very good, but here is how mine turned out.  They were not bright green and pretty like the other recipes I found.

Crock Pot Chicken Tikka Masala 
This is one of my favorite Indian dishes.  Unfortunately each time I’ve looked for the main seasoning, Garam Masala,  I come up empty at all the local stores.  Then I stumbled upon this simmer sauce and decided to give it a try. I have to say that it was delicious and a time saver!  The spices are mild enough that my whole family enjoyed it and even the kiddos had seconds.
Ingredients:
  • 2 lbs Boneless Chicken Breast, cut into large bite-sized pieces
  • 1 Jar Maya Kaimal Tikka Masala Simmer Sauce
  • Peas (optional)
  • 3-4 TBSP Cilantro, finely chopped
Add chicken to sprayed crock pot.  Pour sauce over chicken, stir and cook on low for about 3-4 hours.  In the last 30 minutes of cooking, add peas and cilantro.  Serve over cooked rice or roasted peppers.
