Pizza – My Secret Weapon For Leftovers

Though we love leftovers, sometimes the family just has enough and won’t finish what we have.  This is when its time to get creative and “hide” them in another meal.  I got tired of throwing food away or having to finish it myself. (I can’t bring myself to waste!)  I finally figured out that I can turn many leftovers into pizza and someone will eat it. Pizza is the one food that I have never thrown away.  The leftovers get eaten every time.

Here is our latest “Leftover Pizza” night.

I recently found a 4-pack of thin and crispy pizza crusts, complete with sauce at Costco for under $5.  They were sampling and the kids begged me to buy it.  I like a thicker, softer pizza crust, but this really wasn’t too bad.  I made 3 pizzas using leftovers from the week, using this crust.

The leftover:  Sliced Tomatoes and Chopped Green Onion
I brushed the crust with olive oil and chopped garlic.  Then I added the sliced tomato, green onion, gorgonzola crumbles, topped with mixed organic power greens (spinach, kale, chard) sliced into ribbons.

The leftover: Roasted Turkey Breast
I also brushed this crust with olive oil and crushed garlic and a thin layer of tomato sauce.  I added just a little bit of bbq sauce to kick up the flavor.  Then I added a layer of turkey breast so thin it was practically shaved.  Next up was half of a sautéed onion, 1 finely chopped jalapeño, mozzarella and the same mixed power greens.

The leftover: Roasted Turkey Breast and Roasted Yukon Potatoes
This was mostly for one of the kiddos that is in her “picky eater” phase for the week.  This crust, too, was brushed with olive oil and just a little garlic.  The shaved turkey breast was brushed with BBQ sauce on both sides and added to the crust.  This sauce had more BBQ sauce.  The potatoes were sliced as thin as chips and topped with shredded cheddar and some black olives (my kid’s #1 pizza topping).
They were baked in a 450 degree oven for 10-15 minutes.
All 3 pizzas were good, but my personal favorite was probably the tomato and gorgonzola. Of course this was too much pizza for the 4 of us, and we had leftovers, but I can tell you that the next day it was all gone!
There really are so many options.  Pizza isn’t just sauce and cheese anymore.  You can add so many different toppings and create your own “gourmet” pizza.  More than likely, whatever unique toppings you add to your pizza was probably served somewhere before!
