Buffalo Zucchini Bites

With summer in full swing, I’m bringing the outdoors in with Buffalo Zucchini Bites! Fresh produce is everywhere and I have been making a great effort to create lighter dishes that are hearty, full of flavor, easy to make and don’t leave you feeling sluggish. These Buffalo Zucchini Bites are a perfect example. They can be whipped up very quickly and have a big burst of flavor.

While your grill is heating, clean and slice your zucchini into thick slices. Then grill both sides until golden. It should take about 3 minutes per side, depending on how hot the grill is. Remove from heat and arrange on a baking pan.

In small bowl, add 1/4 Cup Buffalo Wing Sauce with 1-2 TBSP butter. Heat in the microwave in 15 second intervals until butter is melted. Mix well and brush the top of each zucchini round.

Add crumbled Queso Fresco to the top of each round. You can also use blue cheese, feta or goat cheese instead. Place under the broiler for 3-5 minutes or return to grill until cheese is melted. I prefer the broiler because I like when the cheese begins to bubble and brown. Transfer to a plate and serve immediately.

With all the fruits and veggies that came in my produce box, we made:

• Buffalo zucchini bites
• Turkey and pepper rollups with a layer of artichoke dip.
• Asian stir fry
• Caprese flat bread pizza
• Caprese lettuce wraps with balsamic drizzle
• Pulled pork lettuce wraps*

*I hadn’t made pulled pork in awhile because 3 of us really haven’t been eating bread. After making the turkey rollups, it dawned on me that we could try the pulled pork in lettuce wraps and it worked out really well!

The fruit was AMAZING! The plums, peaches, grapes and melon were sweet and juicy. My kids ate the fruit between meals and I also packed it in my daughter’s dance bag for between classes. We devoured it!
