Last night we had leftover Chicken Sausage Burgers, but I wanted it to seem like a completely different meal than the night before. So I made them into Chicken Parmesan Burgers. I just warmed the burgers in marinara sauce and melted mozzarella on top. These would also be fantastic served on garlic bread with a salad on the side!
The kiddos had a side of spaghetti.
And we had “zucchini noodles”.
I found this great little kitchen gadget last year and its perfect for turning zucchini into “noodles”. I quick saute them with onions, peppers and mushrooms. Sometimes I add pesto, but usually we eat it with a good meaty pasta sauce. It was a perfectly light side dish on a warm night – without the carb coma!
