This recipe came about from one of my “What’s For Dinner” moments several months ago. We happened to have been in a dinner rut too. None of our regular meals sounded appealing and we needed something new. I had been wanting to try making some chicken meatballs so I had a couple of packages of ground chicken breast in the freezer. But when I defrosted them, I realized that I accidentally picked up one package of bulk chicken Italian sausage instead. Though this recipe would make some really tasty meatballs, I didn’t feel up for rolling meatballs or cleaning any pans, so I decided to grill burgers instead.
Chicken Sausage Burgers
- 1 lb Ground Chicken Sausage
- 1 lb Bulk Italian Chicken Sausage, sweet or hot (I’ve even used jalapeno sausage)
- 1 Egg
- 1/2 Cup Almond Meal (you could use bread crumbs)
- Salt & Fresh Cracked Pepper, to taste
- A Generous Pinch of Italian Seasoning
- Minced Garlic or Onion, if desired
I add all ingredients in a large Ziploc bag and have one of the kids mush and squeeze it until well mixed. They think its fun. And I’m all for anything that encourages them to take an interest in cooking.
Once well blended, form into burgers (or meatballs). This mixture made 9 burgers.
Then grill the burgers until thoroughly cooked. I think it took about 5 minutes per side. Once you can see the meat cooked half way from the bottom up, then flip.
(If I were making the meatballs, I would bake on a lined cookie sheet for 15-18 minutes at 350deg. – This is an estimate)
They are easy, moist and delicious. I served them on a toasted bun with pesto and fried peppers & onions. So Good!
We had plenty of leftovers, so keep an eye out for how I plan to serve them tomorrow!
