I made these tasty deviled eggs for a brunch today and they were a huge hit!
I am not a fan of mayo and use minimal amounts. Normally, I would have used Greek yogurt in the yolk mixture, but as you know, a clear liquid (whey) separates from the yogurt usually a day or so after opening it. Since I had to prep the eggs the night before, I did not want this liquid forming in the yolk mixture overnight. I had an idea of a substitute and it worked perfectly! Greek Cream Cheese! Same great taste with added protein!!
Deviled Eggs
- 24 Hard Cooked Eggs, peeled and halved
- 1/2 Cup Mayonaise
- 1/2 Block Greek Cream Cheese (4oz)
- 2 TBSP Onion, Grated
- 1 TBSP Stone Ground Dijon Mustard
- 1/2 TSP Garlic Powder
- Coarse Salt, to taste
- Fresh Ground Pepper, to taste
- 2-3 TBSP Fresh Parsley, finely chopped
Once eggs are peeled and halved, remove yolks and place in a bowl. Carefully set aside the egg whites. I refrigerate them while I make the yolk mixture. Mash the yolks and mix in remaining ingredients. Once blended, I use a hand mixer for a more fluffy texture.
If you are making these in advance, store mixture in an air-tight container. Also make sure that the egg whites are also stored in an air-tight container as well, but add paper towels beneath them. Eggs will also give off liquid when stored in the fridge and you will not want slimy eggs when its time to fill them. If you are stacking layers, then add paper towel in between as well.
When ready to assemble, divide the yolk mixture evenly between the eggs. I attempted to pipe the yolk in, but the cream cheese made the consistency thicker and my bag split open, so I gave up. Garnish with finely chopped parsley. Chill until ready to serve.
* TIP – If you are in a rush and need to make Deviled Eggs, Costco sells cooked and peeled hard boiled eggs. You can get 24 of them for under $5. This makes prep even more {simple} and you eliminate the worry over whether the eggs will peel well!
