This Pizza Panini is a great kid-friendly meal! Lazy summer days often put us in a food rut. We eat the same quick and easy meals and eventually we get bored with them. I rarely buy bread these days because my kiddos are not fans of sandwiches, but we passed some sourdough bread at the grocery store and much to my surprise, my kiddos pleaded with me to buy some. They asked me to make sandwiches with it??? The only catch was, there couldn’t be any ham or turkey!
The next day, pizza was requested by one, and grilled cheese by the other, so I thought, why not combine the two? First I grilled the bread. We don’t have a toaster at the moment, so I pulled out my Foreman Grill. Once toasty, I added some marinara, fresh mozzarella slices, turkey pepperoni and fresh basil. I returned the sandwich to the Foreman Grill and grilled it until the bread was golden and the cheese was melted. (I may or may not have placed some spinach and kale in the food processor and added “pesto” to the marinara…)
This Pizza Panini were a big hit! They were gobbled up very quickly. I would make these again. You can add any toppings you like on your pizza. I added some peppers, sun dried tomatoes and leftover meatloaf to my Panini, topped with some crushed red pepper. Maybe not as “pizza-like” as theirs, but still yummy!
