Monday’s after school snack: A Pizzadilla, Celery with Cheese and a Frosty Strawberry Lime Tea.
My kids are on a corn tortilla and pizza kick lately, so I combined both. I heated the corn tortillas in a skillet first. Then I added tomato paste, oregano, garlic powder and cheese. We usually add pepperoni, but we were out.
Once the cheese melted, I folded them in half and served. I used to use tomato sauce, but it made the tortilla soggy or leaked out. I saw a pizza roll recipe awhile back that used tomato paste, so I gave it a try. You do need to season it or it will taste little like “school pizza”, if you know what I mean… The tomato paste was a SUCCESS! No dripping, no soggy tortilla.
Strawberry Lime Tea Slush
5-6 large Frozen Strawberries
1 wedge of fresh lime
1 cup green tea
1/2 cup water
Sweetener of choice (I used one squeeze of Agave Nectar)
Blend on high until smooth. Serve immediately!
