Grilled eggplant is one of my favorite dishes. But I like it even more when its not full of seeds. Did you know that there are both “male” and “female” eggplants? When I was a young, I remember my mother talking to her friend about this at the grocery store. They were comparing the bottoms. Apparently the male has a small round “hole” shape at the bottom and the female has more of a “slit” at the bottom. The male eggplants are said to have less seeds. So as long as I remember, I’ve been choosing the “male” eggplants and I really don’t have a lot of seeds. Check out the difference in my photo below. Look how few seeds there are on the slices I’m grilling!
